Dried Shrimp and Radish Soup

Ingredients

100 g white radish (daikon), dried shrimp to taste, 500 g (about 2 cups) clear broth.

Seasonings

Salt, MSG, Shaoxing wine, and chopped scallions, all to taste.

Instructions

1. Rinse the dried shrimp and set aside; wash and peel the radish, then cut it into thin strips.

2. Heat 1 tablespoon of oil in a wok, sizzle the chopped scallions to release their fragrance, then immediately add Shaoxing wine and clear broth. Add the shredded radish and dried shrimp to the pot. Once the soup comes to a boil and the radish shreds are tender, season with MSG and salt to taste, skim off any foam, and serve. This soup is sweet, savory, and packed with nutrients.
