Seaweed and Shredded Pork Soup

Dried kelp strips and lean meat, both to taste.

Seasonings

to taste: chopped cilantro, chopped scallions, shredded ginger, salt, chicken bouillon, cooking wine, light soy sauce, cornstarch, and sesame oil.

Instructions

1. Soak the dried kelp in water until rehydrated, then rinse clean and set aside. Cut the lean pork into thin strips, marinate with cooking wine, light soy sauce, and cornstarch for 10 minutes.

2. Add water to a soup pot, then add chopped scallions and shredded ginger. Once the water comes to a boil, add the shredded kelp and cook for a few minutes. Then add the shredded pork, making sure not to add it all at once—place it in one or two strips at a time.

3. Once boiling, thicken with a cornstarch slurry, then season with salt, chicken bouillon, and sesame oil.

4. Pour into a soup bowl and sprinkle with chopped cilantro on top. Serve immediately.
