
Ingredients
500 g (about 1 lb) lean pork, 25 g American ginseng.
Seasonings
1 piece of ginger, salt to taste.
Steps
1. Soak the American ginseng in warm water until softened, then slice it; reserve the soaking water. Crush the ginger with the side of a knife.
2. Rinse the lean pork, cut into thick slices, blanch in boiling water, then remove and drain.
3. Add the American ginseng, lean pork slices, and ginger pieces to a clay pot, then pour in the water used to soak the ginseng along with fresh water, and bring to a boil over high heat.
4. Reduce to low heat and simmer for 2 hours (do not lift the lid while simmering), then season with salt to taste and serve.
