Pork Slices and Cucumber Soup

Ingredients

Pork 300 g (about 10 oz), cucumber 200 g (about 7 oz).

Seasonings

5 g minced scallion, 5 g minced ginger, 1 teaspoon salt, 1 teaspoon Shaoxing wine, 1/2 teaspoon chicken bouillon powder, 1/2 teaspoon sesame oil, 2 teaspoons soy sauce, 700 g (about 3 cups) meat broth.

Steps

1. Rinse the pork and slice it thinly. Place the slices in a bowl and marinate with minced scallion, minced ginger, salt, soy sauce, chicken bouillon, cooking wine, and sesame oil.

2. Trim the ends off the cucumber, wash it, and slice it diagonally.

3. Place the pot over heat, add fresh broth and bring to a boil, then add the marinated pork slices and cook until boiling again, skimming off any foam from the surface.

4. Add the cucumber slices, bring to a boil over high heat, then reduce to low heat and cook until the meat slices are tender, then remove from heat and serve in a bowl.
