Winter Melon and Pork Rib Soup

Ingredients

Winter melon 600 g (about 1 1/3 lbs), pork ribs 500 g (about 1 lb), adzuki beans 60 g (about 1/3 cup), 1 small piece dried tangerine peel.

Seasonings

Salt to taste.

Steps

1. Rinse the pork ribs, cut into chunks, then blanch in boiling water for 5 minutes. Remove and rinse clean.

2. Wash the winter melon, cut into thick chunks with the skin on; wash the adzuki beans and dried tangerine peel, then soak in water until softened.

3. Bring an appropriate amount of water to a boil in a pot, add all the ingredients, and once it returns to a boil, reduce the heat to low and simmer for 2 hours, then season with salt to taste.
