Seafood and Mixed Mushroom Stew

Ingredients

100 g (about 3.5 oz) cleaned scallops, 100 g (about 3.5 oz) large shrimp meat, 50 g (about 1.8 oz) oyster meat, 50 g (about 1.8 oz) fresh shimeji mushrooms, 50 g (about 1.8 oz) fresh porcini mushrooms.

Seasonings

1 teaspoon salt, 1/2 teaspoon MSG (or to taste), 500 g (about 2 cups) chicken broth, and a dash of scallion oil.

Steps

1. Clean the scallop meat and slice it; clean the oyster meat and cut in half; remove the stems from the king oyster mushrooms, clean, and cut in half; clean the porcini mushrooms and slice; clean the shrimp meat; blanch each ingredient briefly in boiling water, then drain.

2. Bring the chicken broth to a boil in a wok, then add scallops, shrimp, oysters, king oyster mushrooms, and porcini mushrooms and cook for about 3 minutes. Skim off any foam, season with salt and MSG, and drizzle with scallion oil before serving.
