
Ingredients
Half a young chicken (about 500 g / 1 lb).
Seasonings
150 g (about 5 oz) old ginger, 1 teaspoon sesame oil, 3 tablespoons rice wine, salt and vegetable oil to taste.
Steps
1. Clean the young chicken thoroughly and cut into large pieces; wash the old ginger and slice it.
2. Place a clean pot over high heat, add vegetable oil and heat until hot, then add the chicken pieces and stir-fry over high heat until the moisture evaporates, remove and drain off the oil.
3. Heat oil in a wok or pot over medium-high heat, add ginger slices and stir-fry until fragrant, then add the chicken pieces and stir-fry briefly, pour in water, salt, and rice wine and bring to a boil, cover with a lid, reduce heat to low and simmer for 20 minutes until the chicken is tender and cooked through, drizzle with sesame oil and serve.
