Donkey-Hide Gelatin and Young Chicken Clay Pot

Ingredients

1 whole young chicken, cleaned, 40 g (about 1.4 oz) donkey-hide gelatin, 25 g (about 0.9 oz) astragalus root, 4 red dates.

Seasonings

Salt to taste.

Steps

1. Rinse the young chicken, remove the skin, and chop into pieces. Blanch in boiling water, then remove, rinse, and drain.

2. Rinse the astragalus root under clean water; wash the red dates, gently crush them, and remove the pits.

3. Place a clay pot on the stove, add enough water to cover and bring to a boil, then add the chicken pieces, donkey-hide gelatin (ejiao), astragalus root, and red dates, simmer over low heat for 3 hours, then season with salt and serve in a bowl.
