Snow Pear and Pork Trotter Soup

Ingredients

1 pig's trotter, 200 g (about 7 oz) snow pear.

Seasonings

1 teaspoon salt, 1/3 teaspoon MSG, 1 tablespoon sugar, 1000 g (about 4 cups) aged broth.

Steps

1. Remove any hair from the pig trotters, rinse them clean, chop into pieces, blanch in boiling water, then drain; wash the snow pears and cut into chunks.

2. Place the pot over heat, add the master stock and enough water, then add the pig trotters and cook for 1 hour, then add the snow pear chunks and continue cooking.

3. Season with salt, MSG, and sugar to taste, then continue cooking until the pork trotters are tender and soft; remove from heat and serve in a bowl.
