Lemon Chicken Soup

Ingredients

250 g (about 1/2 lb) chicken wings, 30 g (about 1 oz) lemon.

Seasonings

5 g ginger (smashed), 1 teaspoon salt.

Steps

1. Rinse the chicken wings, blanch them in boiling water, then drain; wash the lemon and slice it; wash the ginger and slice it.

2. Bring a pot of water to a boil, add the chicken wings and ginger slices, return to a boil over high heat, then reduce to low heat and simmer until the chicken wings are tender and falling off the bone.

3. Then add the sliced lemon and cook briefly, season with salt to taste, and serve in bowls.
