Dragon Horse Whole Spring Chicken

Ingredients

1 whole young chicken, cleaned, 2 dried sea dragons and 2 dried seahorses.

Seasonings

Chopped scallions, star anise, Sichuan peppercorns, cinnamon bark, salt, cooking wine, and dark soy sauce, each to taste.

Steps

1. Remove the innards and any impurities from the chicken, wash and clean it thoroughly, then chop into small pieces. Blanch in boiling water for 3 minutes, then drain well. Rinse the sea dragons and sea horses in clean water and soak until softened.

2. Place all ingredients and seasonings in a clay pot, add enough water to submerge them, bring to a boil, then simmer over low heat until the chicken is tender and fully cooked. Season with salt to taste, then remove from the pot and serve in a bowl.
