Red Date and Turtle Soup

Ingredients

1/2 cleaned softshell turtle (about 200 g / 7 oz), 150 g (5.3 oz) lean pork, 12 red dates (jujubes), 20 g fresh lily bulb, 15 g (0.5 oz) dwarf lilyturf root.

Seasonings

5 g ginger slices, 1 teaspoon salt, and 1 teaspoon cooking wine.

Steps

1. Clean the turtle thoroughly and chop into large pieces; wash the pork and cut into small cubes; blanch both in boiling water, then drain and rinse; soak the red dates, lily bulb, and lilyturf root in water, then rinse and drain.

2. Place the turtle pieces, diced pork, red dates, lily bulbs, ophiopogon root, and ginger slices into a stewing pot, add cooking wine and enough water to submerge everything,

3. Cover the bowl with its lid, place it in a preheated steamer, and steam over water for 3 hours. Then add salt to taste, stir well, and serve.
