Pork Bone and Mushroom Soup

Ingredients

Pork shank bones 1500 g (about 3.3 lbs), fresh white king oyster mushrooms 500 g (about 1 lb), cilantro 5 g.

Seasonings

1 teaspoon salt, 1 teaspoon cooking wine, 1/2 teaspoon chicken bouillon, 1/2 teaspoon sugar, 1/2 teaspoon white pepper, 2 tablespoons vegetable oil.

Steps

1. Wash the pork leg bones clean, crack them open; wash the cilantro and chop it into fine pieces; trim and clean the white king oyster mushrooms, steam them in a steamer basket, then remove and place in a bowl.

2. Place the pot over high heat, add enough water to cover the bones, and bring to a boil. Skim off any foam that rises to the surface.

3. Then add the mushrooms, chicken bouillon, sugar, and white pepper. Simmer over medium heat for 2 hours. Finally, season with salt and sprinkle with cilantro before serving.
