Carp and Bitter Melon Soup

Ingredients

1 whole cleaned carp (about 750 g / 1.5 lbs), 200 g bitter melon, 1 lemon.

Seasonings

1 teaspoon salt, 1/2 teaspoon MSG, a pinch of sugar, 1 tablespoon each of ginger juice and cooking wine, and 1500 g (about 6 1/2 cups) of broth.

Steps

1. Clean the carp, cut off the head and tail, remove the bones, and slice into large pieces; wash the bitter melon, cut it in half lengthwise, remove the pith and seeds, then chop into small chunks; wash the lemon and slice thinly.

2. Add broth to the pot, first add the fish slices, bitter melon chunks, and lemon slices, bring to a boil over high heat, then skim off any foam, add salt, MSG, cooking wine, sugar, and ginger juice, reduce to low heat and continue cooking for 10 minutes, then remove from the pot and serve.
