
Ingredients
300 g pork belly, 20 g each of chrysanthemum flowers and goji berries, and 4 Chinese chives (or scallion greens) for tying.
Seasonings
5 g ginger slices, salt to taste, 1 tablespoon cooking wine.
Steps
1. Rinse the pork belly, cut into 4 cm (about 1.5 inch) cubes, and tie each piece crosswise with dried lotus root string; rinse the goji berries; remove any impurities from the chrysanthemum flowers and rinse clean.
2. Bring a pot of water to a boil, add the pork pieces and blanch briefly, then remove and drain.
3. Add enough water to a pot and bring to a boil, then add the pork square, cooking wine, chrysanthemum flowers, and ginger slices, bring to a rolling boil over high heat, add the goji berries, reduce the heat to low and simmer for 2 hours, then season with salt to taste.
