Camellia Chicken Sliced Soup

Ingredients

150 g chicken breast, 10 jasmine flowers, 1 egg white.

Seasonings

20 g scallion segments, 10 g ginger, 2 teaspoons salt, 1 tablespoon MSG, 4 teaspoons Shaoxing wine, 1 tablespoon white pepper.

Steps

1. Rinse the chicken breast, then slice into small pieces; remove the stems from the jasmine flowers and rinse clean; lightly crush the ginger and set aside.

2. Place the pot over heat, add an appropriate amount of water and bring to a boil. Meanwhile, mix the chicken slices evenly with the seasonings, then blanch them in the boiling water until fully cooked. Remove and rinse under cold water to cool.

3. Place another pot over heat, bring the chicken broth to a boil, then season with cooking wine, salt, MSG, and white pepper to taste. Add the chicken slices and cook until just done, then remove and place them in a bowl. Arrange the jasmine flowers on top of the chicken and pour the hot broth over everything. Serve immediately.
