Chinese Yam and Free-Range Chicken Soup

Ingredients

1 whole free-range chicken, 500 g (about 1 lb) fresh Chinese yam, 20 red dates, 10 dried shiitake mushroom slices.

Seasonings

1/2 teaspoon salt, 1/2 teaspoon sugar, 1/2 teaspoon white pepper.

Steps

1. Slaughter the free-range chicken, clean and dress it thoroughly, then chop into pieces. Blanch in boiling water, then remove and drain.

2. Peel and wash the fresh Chinese yam, then cut into chunks; remove the stems from the shiitake mushrooms and wash them; soak the red dates in water, then wash and remove the pits.

3. Add an appropriate amount of water to a pot and bring to a boil. Add the free-range chicken, yam, red dates, and shiitake mushrooms. Simmer until the chicken is tender and fully cooked and the yam is soft. Season with salt, sugar, and white pepper, then remove from heat and serve in a bowl.
