
Ingredients
500 g (about 1 lb) pork spare ribs, 500 g (about 1 lb) winter melon, 70 g rehydrated kelp, 50 g mung beans, 3 pieces young lotus leaves, 20 g dried figs.
Seasonings
Salt to taste and sesame oil as needed.
Steps
1. Rinse the pork ribs, cut into large pieces, blanch in boiling water, then drain; wash the tender lotus leaves.
2. Peel and deseed the winter melon, wash it, and cut into large chunks; wash the kelp and cut into large pieces; briefly soak the mung beans and dried figs in warm water, then rinse.
3. Bring a pot of water to a boil, add the pork ribs, winter melon, kelp pieces, mung beans, lotus leaf, and dried figs, then simmer for 2 hours. Season with salt and sesame oil before serving.
