Silk Gourd and Vermicelli Soup

Ingredients

250 g (about 1/2 lb) loofah (Chinese okra), 25 g (about 1 oz) vermicelli noodles.

Seasonings

10 g scallion segments, 1/2 teaspoon salt, a pinch of MSG, 5 teaspoons ground white pepper, 4 teaspoons vegetable oil.

Steps

1. Trim the ends off the loofah (Chinese okra), gently scrape off a thin layer of the skin, wash, and cut into irregular chunks; soak the vermicelli in warm water until softened.

2. Place the pot over heat, add vegetable oil and heat until hot. First, add the scallion segments and stir-fry until fragrant, then add the loofah chunks and stir-fry evenly.

3. Then add enough water to bring to a boil and let it cook briefly, finally add the vermicelli and simmer for a short time, season with salt, MSG, and white pepper to taste, then remove from heat and serve in a bowl.
