Mustard Greens and Chinese Yam Soup

Seasonings

300 g Chinese yam (about 10 oz), 150 g mustard greens (about 5 oz), 2 tomatoes, a small amount of diced onion.

Seasonings

15 g minced garlic, 1 teaspoon salt, 1/2 teaspoon chicken bouillon powder, 1500 g (about 6 1/3 cups) broth, 2 tablespoons butter.

Steps

1. Peel the Chinese yam, rinse, and cut into small pieces; wash the mustard greens, cut them in half lengthwise, blanch briefly in boiling water, then drain and rinse under cold water before cutting into small sections; scald the tomato in hot water, peel off the skin, and cut into small dice.

2. Melt the butter in a pot over heat, then add the diced onion and tomato, cooking until softened. Pour in the broth, add the yam, mustard greens, salt, and chicken bouillon, and simmer until the flavors meld. Sprinkle with minced garlic before serving.
