1 whole sea bass (about 500 g / 1 lb), 50 g carrot (about 1 small carrot), 15 g cilantro stems.
Seasonings
15 g scallions (green onions), 5 g ginger slices, 1 teaspoon salt, 1 tablespoon Shaoxing wine, 2000 g (about 8 cups) broth or stock.
Steps
1. Scale, gut, and clean the sea bass, removing the gills and head, then debone the fish and take the fillets.
2. Peel the carrot, wash it, and cut into thin strips; wash the scallion and slice into thin strips; wash the cilantro stems and cut into small sections; combine all in a bowl and toss together evenly.
3. Bring the broth to a boil in a pot, add the fish, ginger slices, Shaoxing wine, and salt, and cook until the fish is infused with flavor, then sprinkle in the three shredded ingredients and stir until well combined before serving.
