
Ingredients
300 g chicken wing drumettes and 300 g Chinese yam, plus 80 g carrot.
Seasonings
Scallion shreds and fine salt to taste, 1 tablespoon of cooking wine.
Steps
1. Peel and wash the Chinese yam and carrot, then cut them into chunks; rinse the chicken wing roots under cold water and chop them into sections.
2. Place a pot on the stove, add water and bring to a boil, then blanch the chicken wing roots briefly, remove and drain.
3. Bring a pot of water to a boil, add the chicken wing drumettes, yam chunks, and carrot chunks, then bring to a boil over high heat and splash in the cooking wine.
4. Reduce the heat to low and simmer for about 1 hour, then season with salt to taste, garnish with shredded scallions, and serve in bowls.
