Lingzhi Mushroom and Pork Trotter Soup

Ingredients

1 pig trotter, 20 g (about 0.7 oz) reishi mushroom (lingzhi).

Seasonings

5 g minced scallion, 5 g minced ginger, 1 teaspoon salt, and appropriate amounts of MSG and cooking wine.

Steps

1. Clean the pork trotters by removing any impurities, then rinse them and blanch in boiling water; remove and rinse again; wash the reishi mushroom, drain, and slice into pieces.

2. Place the pig trotters, reishi mushroom, minced scallions, minced ginger, and cooking wine into a clay pot, bring to a boil, and skim off any foam.

3. Reduce to low heat and simmer until the pork trotters are tender and fully cooked, then season with salt and MSG to taste, and serve in a bowl.
