Lamb and Winter Melon Soup

Ingredients

300 g (about 10 oz) lamb, 200 g (about 7 oz) winter melon, 25 g (about 2 tablespoons) chopped cilantro.

Seasonings

A few scallion sections and ginger slices, 1 teaspoon salt, 1/2 teaspoon each of MSG, ground white pepper, and sesame oil.

Steps

1. Wash the lamb and winter melon separately, cut into large chunks, blanch in boiling water, then remove and drain.

2. Bring water to a boil in a pot, first add the lamb chunks, scallion segments, ginger slices, and salt, and simmer until the lamb is about 80% tender, then add the winter melon chunks and cook until everything is tender and soft.

3. Remove the scallion segments and ginger slices, then add MSG, white pepper, and chopped cilantro, stirring until well combined. Drizzle with sesame oil and serve immediately in a bowl.
