Chicken and Longan Red Date Clay Pot

Ingredients

1 whole young chicken, cleaned, 50 g (about 1/4 cup) dried longan meat, 15 red dates (jujubes).

Seasonings

1 teaspoon salt.

Steps

1. Clean and prepare the young chicken, cut into pieces, blanch in boiling water, then drain.

2. Rinse the red dates and remove the pits.

3. Place the chicken pieces, dried longan meat, and red dates into a clay pot, add enough water to cover the ingredients, bring to a boil over high heat, then reduce to low heat and simmer for about 50 minutes, season with salt, and serve in a bowl.
