Water Chestnut and Winter Melon Soup

Ingredients

12 water chestnuts, 80 g (about 1/3 cup) soybeans, 750 g (about 1 1/2 lbs) winter melon, 40 g (about 1/4 cup) ginkgo nuts, 160 g (about 5 1/2 oz) lean pork.

Seasonings

5 g ginger slices, salt to taste.

Steps

1. Peel and wash the water chestnuts; pick out any impurities from the soybeans and rinse them; peel the winter melon, wash it, and slice into thick pieces.

2. Shell the ginkgo nuts, soak them briefly in boiling water, then remove the skins and cores; slice the lean meat, blanch in boiling water, then drain.

3. Bring an appropriate amount of water to a boil in a pot, add all the ingredients and bring to a boil again, then reduce the heat to low and simmer for 2 hours. Finally, season with salt to taste.
