
Ingredients
Half a free-range chicken, cleaned (about 500 g / 1 lb), 1 bitter melon, 1 can of pineapple chunks in syrup.
Seasonings
10 g scallion segments, 5 g ginger slices, 1 teaspoon each of salt and ground white pepper, 1 tablespoon Shaoxing wine.
Steps
1. Rinse the free-range chicken, chop into small pieces, blanch in boiling water, then drain; halve the bitter melon, remove the seeds, rinse, and cut into chunks.
2. Place a pot over heat, add enough water to cover and bring to a boil. Add the chicken pieces, scallion segments, ginger slices, and cooking wine. Once it returns to a boil, reduce the heat to low and simmer for about 20 minutes.
3. Then add the pineapple and bitter melon, continue cooking until tender, season with salt and pepper, then remove from heat and serve in bowls.
