Ingredients
1 whole tender hen, dressed and cleaned (about 500 g / 1 lb), 500 g (about 2 cups) red braising liquid.
Seasonings
50 g ginkgo nuts, 15 g cornstarch, 10 g sesame oil.
Instructions
1. Wash the chicken and squeeze out excess water; peel the ginkgo nuts, remove the cores, and soak them in clean water; pour the red braising liquid into a pot, line the bottom with chicken bones, place the chicken in the pot, add the ginkgo nuts, and slowly simmer over low heat until the chicken is tender and the ginkgo nuts begin to crack; remove the chicken to a serving plate, pick out the ginkgo nuts, and arrange them around the chicken.
2. Thicken the remaining liquid in the pot with a cornstarch slurry, drizzle with sesame oil and mix well, then pour over the chicken to finish. This dish features tender chicken, sweet ginkgo nuts, and a rich, mellow flavor.
