Sesame Oil Turkey Gizzards

Ingredients

3-4 frozen turkey gizzards, 1 small piece of pickled mustard tuber (Sichuan preserved vegetable).

Seasonings

2 slices of ginger, 1 scallion cut into sections. Marinade: 1 tablespoon Sichuan peppercorn salt or coarse salt, 2 tablespoons Shaoxing wine, 1-2 tablespoons ginger juice, pepper to taste. Seasonings: sesame oil and sugar to taste.

Instructions

1. Rinse the pickled mustard greens with boiling water, pat dry, and cut into small thin cubes. Mix with 1 tablespoon of sugar, allowing the pickled mustard greens to absorb the sweetness, then add sesame oil to taste and toss well. Set aside.

2. Thaw the turkey gizzards, then blanch them with ginger slices and scallion segments in boiling water. Rinse, pat dry, and mix with the marinade. Marinate overnight to allow the flavors to fully penetrate. Remove, rinse lightly, and place on a plate. Steam over high heat until fully cooked through. Set aside.

3. Place the turkey gizzard pieces in a deep bowl, add the seasonings and mix well, then add the pickled mustard stem pieces and toss until evenly combined, then transfer to a serving dish.
