Ingredients
500 g (about 1 lb) tomatoes
Seasonings
3 cloves garlic, 15 g (about 1 tbsp) cooking oil, 10 g (about 2 tsp) soy sauce, 1 g chopped scallion, a few star anise, 15 g (about 1 tbsp) sugar, 2 g salt.
Instructions
1. Remove the stems from the tomatoes, wash them, blanch in boiling water to peel off the skins, cut in half lengthwise, then roll-cut into diamond-shaped pieces; slice the garlic.
2. Place a wok over high heat and heat the oil. Add the star anise and fry until fragrant, then add the chopped scallions and garlic cloves and briefly fry. Add the tomatoes and stir-fry, then finish by adding soy sauce, sugar, and salt, stirring well to combine. This dish is sweet and sour, making it an excellent accompaniment to rice.
