250 g (about 2 cups) peanut oil, 20 g (about 1 1/2 tablespoons) Shaoxing wine, 15 g (about 1 tablespoon) each of scallion and vinegar, 10 g (about 2 teaspoons) each of fresh ginger slices, soy sauce, and sesame oil, 7.5 g (about 1 1/2 teaspoons) salt.
Instructions
1. Scale the yellow croaker, remove the internal organs and gills, and rinse clean; make diagonal cuts on both sides of the fish and marinate with salt; shred the fatty pork and cut the greens into sections; heat peanut oil in a wok over medium heat until it reaches 60% hot, then add scallion segments.
2. Stir-fry the ginger slices for a few moments, then add the shredded pork and stir-fry until no longer pink. Pour in Shaoxing wine and vinegar, then add soy sauce, clear broth, and salt. Bring to a boil, place the fish in the pot, and simmer over low heat for 20 minutes. Sprinkle with greens and garlic chives, drizzle with sesame oil, and transfer to a soup bowl to serve. This dish is tender without being mushy, with a rich and mellow broth.
