Ingredients

325 g fresh milk, 20 g fresh straw mushrooms, 6 egg whites.

Seasonings

Instructions

1. Mix fresh milk, egg whites, water chestnut flour, salt, and MSG together, then stir in straw mushrooms until well combined.

2. Heat a wok over low heat, add lard and keep the oil warm over a gentle flame, then pour in the mixed milk, egg whites, and straw mushrooms, gently pushing and stirring until evenly combined; if the heat is too high, briefly lift the wok off the flame, cooking just until the egg and milk are tender and soft. This dish is snowy white, light yet fresh, with a milky flavor, and is best enjoyed in spring.
