Deep-Fried Eight Pieces

Learn to make Deep-Fried Eight Pieces, a classic Chinese chicken dish with crispy golden pieces marinated in soy, wine, and ginger.

Ingredients

1 tender young chicken (about 500 g / 1 lb)

Seasonings

500 g (about 1 lb) peanut oil, 20 g each of yellow wine and sesame oil, 6.5 g each of sugar and water chestnut starch, and scallion, ginger, and soy sauce to taste.

Instructions

1. Kill and clean the chicken, removing feathers and innards. Cut off the breast and chop it into 4 pieces, then chop both legs into 4 pieces as well (discard the rest). Place the chicken pieces in a marinade made with sugar, wine, soy sauce, scallions, and ginger, tossing to coat. Marinate for 20 minutes, then add water chestnut flour and toss again.

2. Heat peanut oil over high heat until hot, add the chicken pieces and deep-fry until golden brown, then drain off the oil. Add soy sauce, sugar, sesame oil, and wine, and give everything a quick stir until well combined.
