Sweet and Sour Cabbage

Ingredients

250 g (about 1/2 lb) cabbage

Seasonings

Vegetable oil 15 g (about 1 tablespoon), sugar 20 g (about 1½ tablespoons), vinegar and soy sauce 10 g each (about 2 teaspoons), salt 3 g (about ½ teaspoon), Sichuan peppercorns 5.

Instructions

1. Wash the cabbage thoroughly and cut into small pieces.

2. Heat a wok over high heat, add vegetable oil and heat until hot, then add Sichuan peppercorns and fry until fragrant. Add the cabbage and stir-fry until half-cooked. Add soy sauce, sugar, vinegar, and salt, then quickly stir-fry a few more times. Transfer to a plate and serve. This dish is light and elegant, with a pleasant sweet-and-sour flavor. Cabbage is rich in calcium, phosphorus, iron, and vitamin C, and also contains vitamin U, which helps stimulate the appetite and aid digestion.
