Duck Egg Tofu

Ingredients

Firm tofu, salted duck egg yolks, and garlic chives, each to taste.

Seasonings

water starch, sugar, chicken bouillon, cooking wine, broth, sesame oil, oil, salt, scallion, and ginger, each to taste.

Instructions

1. Mash the salted duck egg yolks into a powder; finely chop the garlic chives; wash and mince the scallions and ginger; cut the tofu into small cubes and blanch them in boiling water.

2. Heat oil in a wok over high heat, then stir-fry scallions and ginger until fragrant. Add tofu, broth, salt, sugar, and cooking wine. Once the mixture comes to a boil, stir in the egg yolk powder until well combined. Thicken with a light cornstarch slurry, then sprinkle with minced garlic chives and drizzle with sesame oil before serving.
