Braised Winter Melon

Ingredients

100 g (about 1/2 cup) stock, 500 g (about 1 lb) winter melon.

Seasonings

40 g scallion oil, 35 g peanut oil, 25 g each of sweet bean paste and soy sauce, 20 g water starch, 10 g sugar, 3 g salt, 2 g MSG (or to taste), and scallion and ginger to taste.

Instructions

1. Peel the winter melon, wash it, and cut into pieces about 3 cm long and 1.2 cm wide.

2. Heat peanut oil in a wok until hot, then add scallions, ginger, and sweet bean paste; stir in the winter melon, soy sauce, sugar, MSG, and broth; once it comes to a boil, reduce to a low simmer and cook until the winter melon is tender; thicken with a cornstarch slurry, drizzle with scallion oil, stir well, and serve.
