Steamed Yellow Croaker

Ingredients

2 yellow croakers (about 1000 g / 2.2 lbs total), 100 g (about 3.5 oz) shredded pork.

Seasonings

25 g each of soy sauce, ground white pepper, Shaoxing wine, MSG, pickled chili pepper strips, scallion strips, ginger strips, shiitake mushroom strips, winter bamboo shoot strips, and Sichuan preserved vegetable strips.

Instructions

1. Clean the yellow croaker, score both sides with a crosshatch pattern, then marinate with cooking wine, salt, scallions, ginger, and white pepper for 30 minutes.

2. Heat oil in a wok, stir-fry the shredded pork, then add shredded pickled chili peppers, scallions, and ginger, stir-fry briefly, then add shredded shiitake mushrooms, winter bamboo shoots, and Sichuan preserved mustard greens, season with soy sauce, white pepper, cooking wine, and MSG, stir-fry until well combined, remove from heat and pour over the fish.

3. Steam until cooked through, remove from the steamer, sprinkle shredded scallions on top, and drizzle with hot oil before serving.
