Dry-Braised Beef Slices

Ingredients

Beef and celery, both to taste.

Seasonings

Ginger, julienned; Pixian broad bean paste; chili powder; Sichuan peppercorn powder; cooking wine; MSG; vinegar; and sugar, each to taste.

Instructions

1. Slice the beef into thin pieces and cut the celery into sections.

2. Stir-fry over high heat, add ginger strips, Pixian broad bean paste, and chili powder, and stir-fry briefly until the oil turns red. Add cooking wine, MSG, sugar, and celery, and stir-fry a few more times. Drizzle with vinegar to taste, transfer to a plate, and sprinkle with Sichuan pepper powder before serving.
