Ingredients
600 g (about 1.3 lbs) large shrimp, 60 g breadcrumbs, 1 egg.
Seasonings
800 g (about 1 3/4 lb) vegetable oil (about 80 g/1/3 cup will be absorbed), 30 g (about 1/4 cup) all-purpose flour, 3 g (about 1/2 teaspoon) salt, and 3 g (about 1/2 teaspoon) ground black pepper.
Instructions
1. Remove the head, shell, legs, and tail from the prawns, devein them by taking out the black line along the back, rinse clean, then use a small knife to slit the back open from head to tail, lay the prawns flat on a cutting board, and score them with a crisscross diamond pattern.
2. Place the shrimp meat in a bowl, add salt and pepper, and mix well. Coat both sides with a layer of flour. This dish is golden in color with a crispy exterior and tender interior, featuring a Western-style flavor. It tastes even more delicious when served with chili peppers and soy sauce for dipping.
