Ingredients
1 plump hen (about 1500 g / 3.3 lbs).
Seasonings
100 g (about 3.5 oz) goji berries, 20 g fresh ginger, 2 g salt, 1 g white pepper, 0.5 g MSG (optional).
Instructions
1. Slaughter and pluck the hen, remove the innards, and wash clean. Cut off the head and feet, place in a pot with clean water, and bring to a boil over high heat. Skim off any foam, then add old ginger and goji berries (wrapped in white cheesecloth). Transfer to a covered pot or oven and simmer over very low heat for 4 hours (3 hours for a young chicken). Remove, use chopsticks to shred the chicken meat into strands, discard the backbone, pick out the ginger, and remove the goji berry bundle. Serve.
2. Ladle the chicken broth and shredded chicken into bowls, add MSG, salt, and white pepper, and garnish with tender greens as desired before serving. This dish features a savory broth and tender meat with a clean, authentic aftertaste.
