Ingredients
500 g (about 1 lb) live fresh shrimp, preferably 3-5 cm (about 1-2 inches) long each.
Seasonings
100 g scallion whites, 100 g rice wine, 50 g fermented tofu juice, 10 g soy sauce, 1 g sesame oil, 0.5 g MSG.
Instructions
1. Rinse the live fresh shrimp in clean water to remove any grit, then snip off the sharp rostrum, antennae, and legs. Place the shrimp on a plate and drizzle with rice wine. Cut the white parts of scallions into roughly 3.5 cm (about 1.4-inch) sections and arrange them evenly over the shrimp. Cover with a bowl to let the shrimp marinate—this is the classic drunken shrimp.
2. Mix fermented tofu liquid, soy sauce, MSG, and sesame oil to make the Southern Marinade. Serve alongside the drunken shrimp. When ready to eat, remove the covering bowl and dip the shrimp in the marinade, eating with scallion whites. This dish features delightfully tipsy fresh shrimp with a rich, savory flavor.
