Ingredients
400 g winter melon (about 14 oz), 200 g (about 1 2/3 cups) all-purpose flour, 50 g (about 1/2 cup) Chinese chives, 2 eggs.
Seasonings
8 g fresh ginger, salt to taste.
Instructions
1. Wash and trim the chives, then chop finely; mince the ginger into a paste; in a bowl, combine flour, crack in an egg, add a suitable amount of water and salt, then mix in the chopped chives and ginger paste, stirring until a smooth egg batter forms.
2. Peel and wash the winter melon, slice it thinly, then coat evenly in the egg batter. Deep-fry in oil heated to 350°F (180°C) until golden and cooked through, then remove and drain. This dish is crispy on the outside and tender-soft on the inside.
