Dried Shrimp and Tofu Salad

Ingredients

500 g (about 1 lb) silken tofu, 50 g (about 1/4 cup) dried shrimp.

Seasonings

Sesame oil 20 g (about 1.5 tablespoons), soy sauce 10 g (about 2 teaspoons), minced scallion 5 g (about 1 teaspoon), minced ginger 5 g (about 1 teaspoon), chili oil 5 g (about 1 teaspoon), salt 2.5 g (about 1/2 teaspoon), MSG 2 g (about 1/2 teaspoon).

Instructions

1. Cut the tender tofu into 1.2 cm (about 1/2 inch) cubes, blanch them in boiling water several times, drain well, let cool, and arrange on a serving plate.

2. Blanch the dried shrimp in boiling water, then place them in a bowl. Add soy sauce, salt, MSG, chili oil, sesame oil, minced scallions, and minced ginger, and mix well. Pour this mixture over the diced tofu and serve.
