Smoked Pork Ribs

Ingredients

Pork spare ribs, as needed.

Seasonings

Five-spice powder, salt, cooking wine, ginger slices, scallion segments, master stock, smoking ingredients, sesame oil, Sichuan peppercorns, and cooked vegetable oil, each to taste.

Instructions

1. Cut the pork ribs crosswise into large pieces, keeping three ribs connected per piece. Mix with salt, ginger slices, scallion segments, five-spice powder, Shaoxing wine, and Sichuan peppercorns. Marinate for 20 minutes, then steam until just cooked through. Remove and transfer to a pot of spiced braising liquid, simmering until the meat easily separates from the bone. Take out the ribs and deep-fry in hot oil until golden brown and the meat is dry and fragrant.

2. Place the fried ribs into a smoker, ignite the smoking ingredients, and smoke until the ribs turn a dark red color and are infused with a smoky aroma, then remove, brush with sesame oil, chop into small pieces, and arrange on a plate. This dish has a dark red color and a rich, savory, and intensely aromatic flavor.
