Braised Winter Melon Strips in Soy Sauce

Ingredients

500 g (about 1 lb) winter melon

Seasonings

Sugar 1 tablespoon, soy sauce 1/2 teaspoon, chopped scallions 1 teaspoon, sweet bean paste 2 tablespoons, salt, cornstarch slurry, chicken bouillon powder, and vegetable oil to taste.

Instructions

1. Peel the winter melon, remove the seeds and pith, wash it, and cut into strips. Set aside.

2. Place a wok over high heat, add 3 tablespoons of vegetable oil and heat until it reaches about 60% hot (just starting to shimmer). Add chopped scallions and stir-fry until fragrant, then add the winter melon strips and stir-fry until just tender. Add salt, soy sauce, sweet bean paste, sugar, chicken bouillon powder, and 3 tablespoons of water. Cook over high heat until the melon is fully tender and has absorbed the sauce. Thicken with a cornstarch slurry, stir well to combine, and remove from heat. This dish features a rich, flavorful sauce with tender, smooth winter melon.
