Stir-Fried Chicken with Black Bean Sauce and Chili Peppers

Ingredients

50 g cooked chicken slices, 25 g each of ham slices and spinach hearts, and 250 g chicken broth.

Seasonings

25 g Shaoxing wine, 3 g salt, 50 g lard, 20 g fermented black beans, 5 g Sichuan peppercorns, 10 g cornstarch.

Instructions

1. Heat the wok over high heat, add lard and heat until hot, then briefly fry the ham slices, pour in chicken broth, add the chicken slices, Shaoxing wine, fermented black beans, and Sichuan peppercorns, bring to a boil and cook for a short while.

2. Add salt and spinach hearts, cook until flavored, then thicken with a thin cornstarch slurry. Remove from heat and plate.
