Stir-Fried Shredded Eggplant

Ingredients

1 eggplant, 1 tomato, 1 scallion, 2 cloves garlic.

Seasonings

Salt, MSG (or chicken bouillon), peanut oil, and Shaoxing wine, all to taste.

Instructions

1. Heat oil in a wok or pan over high heat, add shredded scallions and minced garlic, stir-fry until fragrant, then add the shredded eggplant.

2. Then add cooking wine, salt, MSG, and tomato pieces in order, stir-frying until done. This dish is savory with a slight tang, refreshing and light on the palate.
