Stir-Fried Shiitake Mushrooms with Green Beans

Ingredients

400 g (about 14 oz) green beans, 75 g (about 2.6 oz) shiitake mushrooms, broth as needed.

Seasonings

40 g oil, 30 g water starch slurry, 15 g cooking wine, 5 g each soy sauce, sesame oil, and MSG, 2 g each scallion, minced ginger, and salt.

Instructions

1. Remove the strings from the green beans, wash them, and cut diagonally into 3 cm (about 1.2 inch) pieces; blanch in boiling water. Clean the shiitake mushrooms, remove the stems, and slice.

2. Place a wok over heat, add oil and sauté scallions and ginger until fragrant, then add cooking wine, stir in the green beans and shiitake mushrooms, followed by soy sauce, MSG, broth, and salt, and slowly braise until tender; thicken with a cornstarch slurry, drizzle with sesame oil, and serve. This dish is savory and aromatic, with a soft, tender texture.
