Ingredients
500 g (about 1 lb) beef steak, 1 egg.
Seasonings
Shaoxing wine, Sichuan peppercorn salt, soy sauce, MSG, potato starch, and lard, each to taste.
Instructions
1. Cut the steak into strips of even width and thickness, making sure each strip has a piece of bone attached.
2. Add the Shaoxing wine, soy sauce, MSG, cornstarch, and beaten egg to the beef strips and let them marinate.
3. Place all pieces into a wok of oil heated to about 80% hot (350°F/175°C), using a slotted spoon to turn them, and deep-fry until golden brown and floating to the surface, then remove and drain, arrange on a plate, and serve with Sichuan peppercorn salt.
