Braised Twin Mushrooms with Dried Shrimp

Ingredients

175 g dried shiitake mushrooms and 175 g fresh straw mushrooms, with chicken broth as needed.

Seasonings

7.5 g dried shrimp, 7.5 g salt, 4 g MSG, and appropriate amounts of scallion, ginger, sugar, Shaoxing wine, white pepper, and water chestnut flour.

Instructions

1. Braise the shiitake mushrooms until tender; blanch the straw mushrooms in boiling water until cooked, then briefly flash-fry both together in hot oil, drain off excess water, and remove immediately.

2. Heat the dried shrimp, scallions, and ginger in lard until fragrant, then add both types of mushrooms along with chicken broth, salt, sugar, wine, and white pepper, and cook until fully flavored; finally, thicken with a thin slurry of water chestnut starch, remove from heat, and plate. This dish is black with white accents, savory-sweet, and refreshing—perfect for summer.
